In The Interview

Exceptional Hospitality Experiences: Jimmy begins with a story of an unforgettable visit to Eleven Madison Park in New York – a restaurant that, at the time, ranked as the fourth best in the world. He described that the level of detail in their service was extraordinary – from the personalised greeting at the door to the handcrafted box for mobile phones, designed to ensure guests could fully immerse themselves in the dining experience. This particular detail was funny for Jimmy, as it mirrored an innovative concept he had introduced at his own restaurant in Sydney, where they also encouraged guests to lock away their phones to enhance their dining experience.

Creating Unique Dining Experiences: Jimmy elaborates on the core philosophy behind his company, Liquid & Larder, which aims to create extraordinary sensory satisfactions. He emphasises the importance of transporting guests to a specific time, place or moment – ensuring an exceptional experience beyond just food and drink.

Post-pandemic, this philosophy became even more critical as people have started seeking more immersive and memorable dining experiences.

Choosing the Right Locations: When it comes to selecting sites for new venues, Jimmy discusses the importance of understanding the brand’s identity and the market’s needs. He recounts an early lesson from a suburban venue that taught him the significance of being present and connected with the local community.

For his company, high-density urban areas are a better fit due to the unique experiences they offer. The right location, he notes, must align with their operational model, ensuring authenticity and the creation of a vibrant atmosphere that keeps guests returning.

Sustainability and Efficiency in Small Venues: Jimmy addresses the challenges of maintaining sustainability in smaller venues and shares insights into the group’s cost management strategies – including keeping rent, cost of goods (COGS) and labor within specific percentage ranges.

Leveraging Data for Business Decisions: Data plays a pivotal role in Jimmy’s decision-making process. He discusses the challenges of integrating various operational platforms but emphasises the benefits of using a comprehensive reservation system – he specifically mentions SevenRooms (we’ve previously featured Founder, Joel Montaniel and APAC General Manager, Paul Hadida).

Jimmy explains that this system allows them to prioritise loyal customers, manage bookings efficiently, and gain valuable insights into customer preferences and spending patterns.

Fostering Creativity and Innovation: Creativity is at the heart of Jimmy’s hospitality ventures. He describes their process of ideation, starting with their desire for the space and shares the thorough research that he undertakes – often through intensive trips to leading hospitality destinations, worldwide.

By drawing inspiration from successful concepts and adding their unique twist, Liquid & Larder has been able to develop experiences that resonate with guests and stand out in the market.

The Importance of People: Jimmy underscores the critical role of people in his business and the industry more broadly. He believes that the company’s success hinges on a strong culture of values such as accountability, teamwork and a growth mindset and ensures that staff are not just performing tasks but are genuinely committed to creating exceptional experiences. Jimmy shares that the business’ recruitment and performance evaluation processes are designed to uphold these values and that a simple yet effective traffic light system is applied for performance measurement.
